In this case we are using the Kent variety, which has a fine texture and low fibre content, making it ideal for this type of processing. The firmer consistency of dried mango is quite natural. Our mangoes are not treated with sulphur dioxide and are therefore dried to a lower moisture content for durability. For a smoother texture, about 5% mango fructose is actually added, which is naturally produced during the processing of the fruit - it also enhances the sweetness and softens the resulting consistency.
