The de Buyer 4344.01 non-stick baking mat is an excellent replacement for baking paper. It is made from fibreglass coated with Teflon, reusable (up to 200×) and double-sided with a non-stick surface. You can trim it to your desired size. On the mat, you can bake pastries of various types, shapes and sizes, which will be easy to remove after baking. It can withstand temperatures from -170 to +260°C, is very thin (0.08mm), and therefore does not affect heat transfer. The de Buyer baking mat is not dishwasher safe, so wash it by hand only after use.
